In my opinion, tofu is one of the most versatile protein options for vegans. It can range from silken to super firm and can be made into an endless amount of dishes. It is well known in the vegan community that an egg salad can be made as a tofu salad just as deliciously. Here is my recipe!
Tofu salad sandwich on toasted whole wheat bread |
1 block extra firm tofu
3 heaping tbsp vegan mayonnaise
1 tsp dijon mustard
2 tsp yellow mustard
1 tbsp sweet relish
1/2 carrot
1/2 stalk of celery
1/2 small red onion
1 tsp celery salt
1 tsp onion powder
1 tsp garlic powder
1/2 tsp turmeric (optional for yellow color)
1 tsp pepper
2 slices of whole wheat bread
In mixing bowl, roughly break up one block of tofu. Add your mayonnaise, mustards, and relish. Finely chop up your the carrot, celery, and red onion and place into the mixing bowl along with the tofu. Then add celery salt, onion powder, garlic powder, pepper, and turmeric. Mix well and spread on bread to make a sandwich.
Tip: Let it sit overnight for it to taste better.
