Breakfast Burrito

I was scrolling through Tik Tok the other day and I came across a vegetarian food creator shreyacookssss. She is an amazing cook who makes food from all over the world with an emphasis on vegetarian food. This one meal she made really inspired me. Although Shreya eats dairy products, she is very much a vegan ally and has dabbled in vegan food. She made a delicious looking breakfast burrito that I was greatly inspired by. Safe to say it was delicious. Here's my version! 

 

 

Breakfast burrito with hot sauce and a side of iced coffee

 

1 large whole wheat tortilla 
6 tbsp JUST Egg (equal to about 2 eggs)**
1 slice cheese (I used Violife Smoked Provolone)
2 tbsp salsa 
1 potato hash brown patty 

1. Place the potato hash brown patty in a toaster oven or regular oven. Bake for about 10 minutes at 425°F. 

2. While the patty cooks, heat a small pan and add the JUST Egg vegan egg substitute. Cook scramble the egg up. Then turn the heat down, and your add your cheese slice on top (break it up if you have to). Cover the egg and cheese so that the cheese can slightly melt from the heat. 

3. Once the has brown patty is done baking, remove from the oven, and cut it in half. Place your egg and cheese mixture in the lower part of the center of the tortilla, then your hash brown patty on top.

4. Add salsa and roll the tortilla up like you would a burrito, folding the sides first and rolling it up. Once rolled up, place the burrito on a hot pan and let it toast on both sides. 


**NOTE JUST Egg can be quite expensive. If it is not in your price point, please feel free to replace with tofu scramble, or gram flour scramble. Good news! Just Egg is now available at Walmart!
