Breakfast Sandwich

Breakfast sandwiches come in many forms. Croissants, bagels, English muffins, and biscuits could all be used to house your favorite breakfast protein options. Of course, in fast food restaurants, you typically some combination of sausage, bacon, eggs, and cheese. After going vegan, I can definitely say that I have craved these sandwiches a few times. Here's a recipe for a vegan breakfast sandwich I made!

3 tbsp JUST Egg*
1 home style biscuit (I used Pillsbury)*
1 slice of cheese (I used Chao

Prepare your biscuits according to the instructions you have. I used Pillsbury Southern Homestyle biscuits as they are one of the few "accidentally vegan" items. Once the biscuits have baked, let them cool for about 10 minutes and cook your JUST Egg in an egg ring on medium-low heat. Set aside your small omelette patty and cook your Beyond sausage patty on the stove top according to package instructions (you may also bake them in the oven, but it may be tricky if you are cooking your biscuits in the meantime). Once the biscuits have cooled, slice one open and add a slice of cheese (I cut my cheese slice into a circle to fit in the biscuit sandwich a little better). Then assemble the sandwich by adding your "egg" and sausage patty. Add some ketchup and enjoy! 

 

*NOTES: 

  • Feel free to substitute JUST Egg with a slab of tofu or a gram flower omelette (recipe coming soon!).
  • If you aren't a fan of biscuits, feel free to use another bread such as the aforementioned bagel, croissant, or English muffin. 
  • Feel free to omit the sausage patty as well, or even use another brand, if Beyond sausage patties are not in your price point.
