Hummus Toast with Tofu Scramble

While I mostly crave sweet breakfasts such as pancakes, french toast, cereal, or oatmeal sometimes it's nice to have a savory meal now and then as my first meal of the day. This recipe is warm, comforting, and high in nutrients including healthy fats, protein, and antioxidants. 

 

 

Hummus toast, topped with scrambled tofu, and red pepper flakes

 

2 pieces of whole wheat bread 
4 tbsp hummus 
1/4 block of extra firm tofu 
1 tsp salt 
1 tsp turmeric (optional) 
1 tsp pepper 


1. In a pan, crumble up tofu into small chunks and cook up for approximately 3-5 minutes. Add salt, pepper and turmeric if available. 

2. Set scrambled tofu/eggs aside and toast up 2 pieces of whole wheat bread (you can use white bread but wheat bread is for added fiber if needed). 

3. On each piece of toast, spread your favorite flavor of hummus. Place scrambled tofu/eggs evenly on the two pieces of toast and enjoy!
