Three-Bean Chili

Sometimes all you need is a bowl of chili to warm you up during the cold season. For those on a budget, this chili recipe is far from authentic, but definitely hits the spot and takes a fraction of time to make. It's also great for a cozy warm meal in a cold night.

 

Three-Bean chili topped with Daiya Mozzarella Shreds

1 can black beans
1 can kidney beans
1 can small white beans
1/2 can corn 
1/4 cup soy protein ground (optional)** 
1/2 jar of tomato salsa 
1 tbsp chili seasoning
1 tsp cocoa (optional: adds a new depth of flavor) 
1/2 cup vegetable broth 


1. In a pot, heat up broth and salsa, once it begins to simmer, add plant-based ground, black beans, and corn. 

2. Mix for approximately 2 minutes and add chili seasoning (sometimes taco seasoning is cheaper) and coca. Mix and let simmer for another 5-10 minutes to let the spices sink in. 

3. Pour in a bowl and enjoy with some sour cream, cheese, and corn bread!


**NOTE: Soy protein ground can be expensive, so feel free to omit - I, personally love a three-bean chili even without the additional ground protein.
