Blueberry White Chocolate Oatmeal

Frozen fruit and oatmeal are both inexpensive when it comes to vegan food. All the ingredients for this, I got from Walmart. You may change up the recipe to your tastes and price point to fit how you like. This is also a great dish for when fresh blueberries are in season (although they can be a bit expensive) 



Serves 1 individual

1/2 cup old-fashioned oats
2 tbsp frozen blueberries
1/2 cup milk (I use soy milk) 
1/2 tsp vanilla
1 tbsp sugar
1 tbsp pecans
1 tbsp hemp hearts, ground flax seeds, or chia seeds 

1. In a microwave-safe bowl, mix quick oats and milk. Microwave approximately 1 minute (time may vary depending on microwave). 

2. Place frozen blueberries and mix in with the oatmeal. The blueberries will thaw out in the heat of the oatmeal. 

3. Once mixed, top with white chocolate chips, nuts and seeds of your desire (I found that ground flax seeds are the most accessible and inexpensive while holding health benefits).
