Apple Cinnamon Oatmeal

As the colder months encroach upon us, it is enticing to wake up to a warm bowl of oatmeal, filled with delicious, nutrient-dense ingredients that start your day off well and full of energy. Oatmeal is one of my favorite slow-burning carbohydrates. The energy it provides can keep me full for almost half a day. This fall-themed apple pie oatmeal just hits the spot while I stare out at the beautiful colors that the autumnal season provides us.

1/2 cup old-fashioned oats
1/2 apple of your choice
1 cup milk (I use soy milk)
1 tsp vanilla extract
2 tbsp brown sugar
1 tsp cinnamon
1 tbsp pecan or any other nut of choice
1 tbsp flax seeds or hemp hearts
2 tbsp brown sugar or maple syrup

1. Finely chop up half an apple and store away the rest. Keep the peel on if you can, as it adds more fiber.

2. In a microwave safe bowl, add oatmeal, apple, and milk. Cook for about 2 minutes in the microwave. Once it has cooked, add more water to thin it out to add the protein powder (skip this step if omitting protein powder).

3. Sprinkle in 1 tsp cinnamon and mix up a little more. Chop up some pecans, and sprinkle some ground flax seed or hemp hearts on top for garnish and nutrition.
