It's been a rough week, and I definitely wanted to indulge in some comfort food. I was craving some buffalo wings so I decided to make these super delicious and easy buffalo tofu bites with a home made vegan ranch sauce!

Chop up your tofu into a large cubes and pat them dry with a paper towl. In a mixing bowl, add flour, corn starch, cayenne pepper, garlic powder, and onion powder. Mix it up and add your water until it turns into a consistency of a thick batter. Take another bowl and pour in your panko breadcrumbs. Once the oil has heated up, dip the tofu pieces into the batter and then the bread crumbs. Set aside the bread-crumb-coated tofu bites on a piece of parchment or wax paper.
Then bring a pot of oil to medium heat. Tip: place a wooden spoon in the oil and if it begins to bubble around it, it is hot enough. Start placing your tofu pieces into the oil and fry for approximately 5 minutes. Once they are a golden brown, set them aside on a paper towel to absorb any excess oil.
As the tofu bites are set aside, prepare vegan buffalo sauce with red hot sauce, vegan butter, and apple cider vinegar. Then prepare the ranch dipping sauce with mayonnaise, lime juice, nutritional yeast, garlic powder, onion powder, dill weed, and pepper.
In a mixing bow, add your tofu bites and buffalo sauce. Use a spoon or shake the bowl until the tofu bites are lightly coated in the buffalo sauce. Plate your tofu bites and serve them with ranch. Enjoy!
