Cranberry Walnut Bread

As the winter months begin, I find myself looking forward to more holiday-themed flavors. Roasted nuts, and dried fruit come to mind. This vegan cranberry walnut bread recipe is fluffy, comforting, and a delicious way to start the day. 


Cranberry walnut bread served with a side of fresh orange rounds




2 cups all-purpose flour
3/4 cup sugar 
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup freshly squeezed orange juice 
1/4 cup water 
1 tsp vanilla extract
2 tbsp aqua faba (chickpea water)
1/4 cup canola oil
1 tbsp orange zest
1/2 cup dried cranberries
1/2 cup walnut halves

1. Preheat your oven to 350℉. Then pour your dry ingredients into a mixing bowl and stir: all-purpose flour, sugar, baking soda, baking powder, and salt. 

2. Pour some aquafaba into a measuring cup and whisk for a few minutes until bubbles start forming (this will lead to a very fluffy bread). 

3. Pour freshly-squeezed orange juice, water, canola oil, and orange zest into the measuring cup and mix. Then pour into dry ingredients and mix until they are incorporated. 

4. Add in your dried cranberries, walnut halves, and vanilla extract. Then pour into a 9 x 5 baking pan, and bake at 350℉ for approximately 50 minutes. 

5. Once the bread is baked through (do the toothpick test in the center if you are uncertain), let the loaf rest in its pan for about 30 minutes while it sets. After, feel free to remove from the pan, cut and serve. Enjoy!
