Tofurkey Vegetable Sandwich

Sandwiches have been a staple lunch option for Americans for as long as I can remember. People take solace in the tradition of having a sandwich with a side of chips and a soda to wash it all down. Unfortunately, there aren't many vegan options sold in these places. I always see them sold with cheese, some sort of processed meat, and a small assortment of veggies. Here is a recipe for a delicious vegan vegetable sandwich! 


Vegetable sandwich with Tofurky peppered deli slices, and a side of spicy sweet chili Doritos



2 slices of whole grain bread 
4 vegan seitan deli slices (I used Tofurky)
1 slice vegan cheese (I used Field Roast Chao)
1 slice beefsteak tomato
3 slices of dill pickle 
1 small ring of red onion
4 leaves baby spinach
1 tbsp avocado
1 tbsp mayonnaise
1 tsp garlic powder


1. Place your bread slices in the toaster or toaster oven for about 2 minutes. Then mash an avocado. 

2. Mix the mashed avocado with mayonnaise and garlic powder. This will be the spread for your sandwich. 

3. Cut your onion, and tomato. Once your bread is toasted, it is time to assemble. 

4. Spread your avo-mayo sauce. Then lay down your seitan deli slices in folds and add cheese on top. Then top them with red onion, tomato, dill pickle, and baby spinach. Top with your other slices of bread. 

5. Press the sandwich down, to help it stay together. Then serve your sandwich with your favorite side. Enjoy!
