Eggless Pumpkin Spice French Toast

French toast is the perfect Sunday brunch meal. This recipe is a twist on the classic meal, with the addition of pumpkin and pumpkin spice. It's also completely vegan! 

 

Pumpkin French Toast with whipped cream, maple syrup, and powdered sugar

1 loaf of bread (I used whole wheat)
1 tbsp pumpkin puree 
1 tbsp sugar
1/4 cup gram flour 
1 cup milk (I used soy milk)
1 tsp cinnamon
1/2 tsp clove
1 tsp nutmeg
1/2 tsp ginger
1/2 tsp allspice
1 tsp vanilla extract
2 tbsp vegan butter (I used Miyoko's)

In a mixing bowl, add gram flour and milk. Whisk thoroughly until well combined. Then add pumpkin puree, sugar, and vanilla extract. Whisk again until it is mixed thoroughly. Then add cinnamon, clove, nutmeg, ginger, and allspice and whisk again. Set aside and bring a pan to heat, adding 1 tbsp of butter. 

Once the butter has melted, dip a slice of bread into the custard for it to soak up. Do this for approximately 10 seconds on each side. Place your bread on the hot pan and cook on medium heat for approximately 2 minutes before flipping over. Cook the other side for another 2 minutes and set aside on a plate. Continue to repeat these steps for your other slices of bread until the custard has run out. Stack and serve with your favorite french toast toppings. Enjoy!
