Pasta with Italian Sausage

Sometimes, you enter the kitchen with nothing particular in mind, but the muses still come to you for inspiration. That is exactly what happened to me with this dish. This creamy pasta with vegan sweet Italian sausage was so delicious there were no leftovers! It is an excellent dish to make for an indoor date night, the holidays, or just a regular day. 

 

Farfalle in a creamy sauce with sweet Italian Beyond Sausage


Serves: 2 people 
1 tsp red pepper flakes
2 tsp garlic powder
2 cups farfalle pasta 
1/2 cup dry white wine (I used vegan Pinot Grigio)
1/2 cup tomato puree
1 cup oat milk


1. Bring a pot of water to boil and add your farfalle pasta (these are the bowtie shapes). Let this pasta cook for about 5-6 minutes. 

2. In a separate pan, break up your Beyond Sausages and sautee for a few minutes until they are browned. Sprinkle in your red pepper flakes and garlic powder. Then deglaze your pan with wine and let it simmer for the alcohol to cook away. 

3. Once the alcohol has mostly evaporated, add tomato puree and let it cook for about 3-5 minutes. Then add a cup of oatmilk and mix it all together. Let the sauce reduce after a few minutes. 

4. By now, your pasta should be done. Drain your pasta with a little bit of pasta water remaining and cook it in the sauce for about 2 minutes. 

5. Once the pasta and sauce have been fully incorporated, plate and serve. Enjoy!
