Vegan French Toast Casserole

 Sometimes, you are in a rush to make food or have to make food for a large group of people. This french toast casserole is a perfect recipe to elevate your brunch or breakfast. It is also a great way to serve many people without too much effort. Traditional french toast may take a while to serve a large group.

 Serves: 2 people (Adjust servings) 

4 slices of bread 
2 tbsp butter 
1/2 cup gram flour (chickpea flour)
3/4 cup milk (I used oat milk)
2 tsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg 
1 tbsp powdered sugar

1. Preheat your oven to 400℉ and grease a casserole dish with butter. 

2. Dice your bread slices into small cubes - as if you were making croutons or stuffing. 

3. Place them in the casserole dish. Then it is time to make the custard. 

4. In a mixing bowl, put in gram flour, milk, vanilla extract, cinnamon, and nutmeg. Whisk well until all are incorporated. 

5. Pour the custard into the bread and mix well until all pieces have soaked it all up. Ensure the pieces are evenly spread and top with some more butter. 

6. Place in the oven for 20 - 25 minutes. Then let cool for 10 - 15 minutes. 

7. Dust some powdered sugar on top, slice, and serve with maple syrup. Enjoy!
