I'm pretty sure I've said this before, but I love having dessert for breakfast. What I love more, is having something that is delicious as well as nutritious. This is especially the case since today was election day and I needed some comfort food to take the edge off my stress. These apple cinnamon pancakes were delicious, comforting and a great way to start a day.

Cut and core your apple. Then cut it in half and begin to slice into thin, flat pieces. Leave the apple skin on to keep the fiber if you'd like. Once the apples have been sliced, place in a microwave safe bowl and microwave for approximately 2-3 minutes. This should soften and slightly cook the apples.
In a mixing bowl, mix your milk, vinegar, and vanilla extract. Then add your all purpose flour and cinnamon. Mix until all ingredients are combined (tip: don't mix too thoroughly or there will be too many gluten strands and the pancakes won't get as fluffy).
Heat a skillet to medium-low heat and add a neutral oil or butter. Using a ladle, scoop out the pancake batter and pour half of it onto the pan. Then place some of your apple slices on top to create a layer of apple. Then pour the other half of the pancake batter over the apples to cover them. Let this cook until bubbles start forming on top. Then flip the pancake over and let it cook until you see the edges bubbling from the other side. cooking on medium-low heat will allow the full pancake to cook without burning any side. Cook each side for approximately 3-5 minutes. Once they are golden on each side, stack up your pancakes and serve with maple syrup. Enjoy and let me know in the comments what you think!
